Ingredients

2 oz 9north Carta Blanca Rum
1 tsp Dolin Blanc
1/2 oz lemon Juice
1/4 oz Honey Syrup (½ honey, ½ water)
3 ounces club soda
Garnish- thyme sprig

Assembly

Combine all ingredients except for club soda in a shaker with ice. Shake well, pour over ice into a highball, top with club soda and garnish with thyme.

This is more of a prohibition era drink. This combination is dry, bringing out the more herbal characteristic of the Carta Blanca complemented by the slightly sweet, floral Dolin.
